Ingredients:

2 medium courgettes (zucchinis), thinly sliced
1 onion, thinly sliced
4-5 large eggs
Salt and pepper, to taste
Olive oil, for cooking

Instructions:

Preheat your oven to 180°C (350°F).
Heat a bit of olive oil in a large oven-safe skillet over medium heat. Add the sliced onions and cook until they are soft and translucent, about 5 minutes.


Add the thinly sliced courgettes to the skillet with the onions. Cook, stirring occasionally, until the courgettes are tender, about 5-7 minutes. Season with salt and pepper to taste.


While the courgettes and onions are cooking, crack the eggs into a mixing bowl. Whisk them together until well beaten. Season the eggs with salt and pepper.
